Marinate these chicken breasts while you at work and they’ll take just ten minutes to cook when you get home. Have some tonight and refrigerate the rest for sandwiches and salads all week.
- 6 4-ounce boneless, skinless chicken breast halves
- Nonstick cooking spray
- 1 T mild curry powder
- ½ t salt
- ½ t freshly-ground black pepper
- ½ medium lime
Lay the chicken breasts out in a baking dish lightly coated with cooking spray. Season with curry powder, salt and pepper. Squeeze the juice of the lime over all, cover and refrigerate for at least 4 hours or overnight.
Preheat broiler and, once hot, place six inches from element. Broil for three minutes, turn and broil for another 4-5 minutes or until internal temperature reads 165-degrees.
Serve immediately or let cool to 70-degrees before refrigerating in a covered container. Makes 6 servings.
